These Twice Baked Potatoes are creamy on the inside and lightly crisp on the outside, combining fluffy mashed potatoes with melty cheese and nutritious broccoli. Baking them twice deepens the flavor while creating a comforting, family-friendly dish that works as both a hearty side or a simple vegetarian main.

Ingredients

  • 2 russet potatoes
  • 2 tablespoons unsalted butter
  • 2 tablespoons sour cream
  • ½ teaspoon kosher salt
  • 2 tablespoons milk
  • ½ cup broccoli, cooked and chopped
  • ¼ cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (205°C).

  2. Place potatoes directly on the oven rack or a baking sheet and bake for 1 hour, until tender.

  3. Remove from oven and cool for about 10 minutes, until safe to handle.

  4. Slice potatoes in half lengthwise.

  5. Carefully scoop out the flesh into a mixing bowl, leaving a thin layer inside the skins for structure.

  6. Mash the potato flesh with butter, sour cream, salt, and milk until smooth.

  7. Stir in chopped broccoli and shredded cheddar cheese.

  8. Spoon the filling back into the potato skins evenly.

  9. Place filled potatoes on a baking sheet and bake again for 10 minutes, until heated through and lightly golden on top.

  10. Serve warm.
