This Tomato Bruschetta is proof that simple ingredients can create big flavor. Juicy tomatoes, fresh basil, and garlic come together on crisp toasted bread for a bright, fresh appetizer that’s easy enough for weeknights but special enough for gatherings.

Ingredients

  • 1/2 baguette, sliced into ½-inch pieces

  • Extra virgin olive oil, for brushing bread

  • 3 tablespoons extra virgin olive oil

  • 2½ cups cored, seeded, and diced tomatoes

  • 2 tablespoons thinly sliced fresh basil leaves

  • 1/4 teaspoon minced garlic (about 1 small clove)

  • 3/4 teaspoon kosher salt

Instructions

  1. Make the tomato mixture:
    In a bowl, combine tomatoes, 3 tablespoons olive oil, basil, garlic, and salt. Stir well and let sit while preparing the bread so the flavors meld.

  2. Toast the bread:
    Preheat oven to 350°F (175°C). Lightly brush baguette slices with olive oil and place on a parchment-lined baking sheet.

  3. Bake:
    Toast for 4–7 minutes, until golden and crisp. Allow bread to cool completely.

  4. Assemble:
    Spoon the tomato mixture onto each toast just before serving. Serve immediately.

Notes

Ripe, in-season tomatoes make the biggest difference here. Store tomatoes at room temperature — refrigeration dulls their flavor and texture.
