Ingredients

  • 1 tablespoon minced fresh ginger

  • 1/4 cup mirin

  • 1/4 cup honey

  • 1/4 cup low-sodium soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon sesame oil

  • 1 teaspoon togarashi spice blend (optional)

  • 2 bone-in, skin-on chicken breasts

  • 4 bone-in, skin-on chicken legs

  • 3 scallions, chopped

Instructions

  1. In a large zip-top bag or a 13 x 9-inch baking dish, whisk together the ginger, mirin, honey, soy sauce, rice vinegar, sesame oil, and togarashi (if using).

  2. Add the chicken pieces and turn to coat thoroughly in the marinade. Cover or seal and refrigerate for at least 1 hour, or up to overnight for deeper flavor.

  3. Preheat the oven to 450°F.

  4. Arrange the chicken skin-side up in the baking dish (or transfer from the bag), pouring the marinade over the top.

  5. Bake for 30 minutes, or until the skin is golden brown and the chicken is cooked through (internal temperature should reach 165°F).

  6. Remove from the oven and let rest for a few minutes. Sprinkle with chopped scallions before serving.

Notes

  • Marinating overnight will intensify the flavor and tenderness.

  • For extra caramelization, broil for 1–2 minutes at the end of cooking.

  • Boneless chicken thighs can be substituted, but cooking time may need adjustment.

  • Serve with steamed rice, sautéed greens, or a crisp cucumber salad for a complete meal.
