Ingredients

  • 1 teaspoon olive oil

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 carrot, peeled and diced

  • 1 (28-ounce) can diced tomatoes

  • 1/2 teaspoon kosher salt

  • 1 pound prepackaged gnocchi

  • 2 tablespoons thinly sliced basil

  • Parmesan cheese, for serving

  • Mozzarella balls, for serving

Instructions

  1. Heat the olive oil in a sauce pot over medium heat. Add the onion, garlic, and carrot and sauté until softened, about 5 minutes.

  2. Stir in the diced tomatoes and salt. Simmer for 20 minutes.

  3. Remove from heat and puree until smooth using an immersion blender, or carefully transfer to a blender and puree.

  4. Meanwhile, cook the gnocchi according to package directions.

  5. Drain the gnocchi and add them to the sauce. Simmer together for 2 minutes to allow the flavors to meld.

  6. Top with fresh basil, Parmesan cheese, and mozzarella balls before serving.
