Broiled Avocado with Parmesan Cheese
This recipe yields a delicious and easy snack featuring the decadent super fruit – the avocado.
My daughter and I love avocados. We often peel and slice them and drizzle lightly with extra virgin olive oil and freshly ground salt and pepper. Simple, pure and oh so yummy!
I have seen broiled avocado recipes on Pinterest for a few months now and figured it was time to give it is a try. Some recipes call for cayenne pepper and others call for hot sauce and they would be great additions. I prefer it even simpler. This is a new favorite recipe and it couldn’t be easier!
- Avocados provide nearly 20 essential vitamins and minerals: potassium, folic acid and other B-vitamins, as well as vitamins E and K. They also contain phytonutrients, believed to help prevent many chronic diseases.
- Avocados contain the mono- and polyunsaturated “good” fats that are recommended as part of a healthy diet.
Yield: Serves 2
Ingredients:
1 Avocado
Freshly Ground Sea Salt
Freshly Ground Pepper
1 Tablespoon Lime Juice
2 Tablespoons Shredded Parmesan Cheese
Adapted from the food blog, Morsels and Musings
Directions:
Preheat your broiler and be sure your oven rack is in the middle and not the top.
Slice the avocado in half being sure to keep a clean straight line, and gently remove the large pit.
Take a sharp knife and make slash marks in the avocado flesh but being careful not to go all the way through. (The slash marks help the juice to get in the flesh.)
Drizzle the lime juice over each avocado half, and dust your avocado with the freshly ground pepper and freshly ground sea salt. Now add your Parmesan cheese sprinkling it evenly on both halves.
Place the avocadoes on a baking sheet or baking dish and cook under the broiler for about 4 minutes.
Serve immediately. Grab a spoon, scoop to eat and enjoy!!
