Spicy Cauliflower & Chickpea Tacos With Mango Salsa & Guacamole Crema

We have now been embracing our predominantly plant based diet for over six months and I cannot imagine ever changing. With a little imagination we can enjoy all the meat based dishes that we used to in the past by making them vegetarian, and in fact I found I am enjoying them even more than I ever expected. I recently made the Siracha And Honey Roasted Cauliflower and included some chickpeas to create a hearty filling for tacos. I added some shredded red cabbage, and topped the tacos with our favorite spicy mango salsa. To dress the tacos before serving and add an added fresh burst of flavor I sprinkled them with some fresh cilantro leaves and a guacamole crema drizzle. These tacos were totally satisfying, full of flavor, and I can’t imagine anyone missing the meat! These tacos are certainly going onto our list of weekly favorite dishes that I like to rotate through.

In place of the mango salsa, feel free to use our favorite Pico di Gallo Sauce if you prefer which would also be tasty. You could add black beans in place of the chickpeas, and your favorite cole slaw recipe in place of the shredded cabbage.

Spicy Cauliflower & Chickpea Tacos With Mango Salsa & Guacamole Crema

Ingredients:

1Recipe Siracha & Honey Roasted Cauliflower Mixed With 1 1/2 Cups Drained Canned Chickpeas
8 Small Tortillas Of Choice
1 1/2 Cups Shredded Red Cabbage
1/3 Cup Fresh Cilantro Leaves
Lime Wedges
For Mango Salsa:
1 Large Ripe Mango, Cut Into 1/2 Inch Dice
1/4 Cup Finely Diced Red Onion
1/3 Cup Finely Diced Red Bell Pepper
1 Jalapeno Pepper, Finely Minced
1/2 Tablespoon Lime Juice
3 Tablespoons Finely Chopped Fresh Cilantro
Salt & Pepper To Taste
For Guacamole Crema:
1 Ripe Avocado
Juice of 1 Lime
1/4 Cup Olive Oil
Salt & Pepper To Taste
1/4 to 1/3 Cup Water
2 Tablespoons Fresh Cilantro Leaves

Directions:

To prepare the salsa, mix all the ingredients in a small bowl.
To prepare the guacamole crema, place all the ingredients in a blender and pulse until smooth.
To assemble the tacos, spoon some of the roasted cauliflower and chickpeas into the center of the taco.
Top with shredded cabbage, and a spoonful of mango salsa.
Sprinkle with some of the cilantro and then drizzle with the guacamole crema.
Serve immediately with lime wedges.
