Buffalo Chicken Wraps

During the holidays we had the whole family visiting so I needed to prepare some quick and easy meals to feed everyone that were both healthy and delicious. Wraps are always a great choice for fast lunches and can be adapted to meet everyone’s likes and dislikes. This tasty buffalo chicken wrap has the flavors of those spicy chicken wings we all love, but by using the breast meat of a grocery store rotisserie chicken and whole wheat wraps, and by lightening up the blue cheese sauce it became a much healthier alternative to fried buffalo wings. I added thin celery sticks for crunch, baby spinach leaves and diced tomatoes for added nutrition although you could substitute my choices for your own ingredients very easily.

  • Using low fat mayonnaise and fat free yogurt along with blue cheese crumbles creates a tasty blue cheese sauce with fewer calories from fat.

Buffalo Chicken Wraps

Yield: Serves 4

Prep Time: 15 mins

Ingredients:

1 Pound Cooked Chicken Breast Meat, Cut Into Strips
2 Tablespoons Hot Buffalo Wing Sauce (Plus Additional For Assembly)
Salt & Pepper
Dash Cayenne Pepper
4 Whole Wheat Tortillas
1 Celery Stalk, Cut Into Matchsticks
1 1/2 Cups Baby Spinach
1 Large Tomato, Cut Into Dice
Sauce:
1/4 Cup Crumbled Blue Cheese
1/4 Cup Low Fat Olive Oil Mayonnaise
3 Tablespoons Fat Free Greek Yogurt
Sat & Pepper

Directions:

Place the chicken in a bowl and toss with the buffalo sauce, then season with salt and pepper.
In a small bowl, whisk together the blue cheese, mayonnaise, and yogurt, then season with salt and pepper.
Lay a wrap on the counter, then spread with a tablespoon or two of the sauce, and top with one quarter of the chicken, celery, tomatoes, and baby spinach.
Drizzle the ingredients with a little extra buffalo hot sauce.
Tuck in the sides of the wrap, then roll fairly tightly into a wrap.
