Pico de Gallo

Pico de gallo, also called salsa fresca, is a fresh, uncooked condiment made from chopped tomato, white onion, and chilies (typically jalapeños or serranos). This salsa is so easy to make and so much better than store bought salsa! Once you begin to make your own fresh salsa at home, the stuff they sell in jars will never taste the same.

I make this salsa at least once a week and apart from enjoying it simply with some healthy tortilla chips, I like to spoon it over eggs in the morning, or on top of grilled seafood or chicken. We like our salsa fairly spicy, but you can adjust the heat for your own taste by either cutting down on the jalapeño or adding extra if you really like it hot! I try to use plum tomatoes as they are less watery than others, but any really ripe, fresh tomato will work just fine.

Pico di Gallo

Fresh tomato salsa or Pico de Gallo is an easy and tasty snack or topping that can be made in mere minutes.

Yield: Serves 6

Prep Time: 10 mins

Ingredients:

5 Medium Sized Tomatoes, Chopped
1 Medium Onion, Peeled & Chopped
1 Sweet Red Pepper, Cored & Chopped
1 to 2 Jalapeño Peppers, Cored & Finely Minced
1/2 Cup Fresh, Chopped Cilantro
Juice of Two Fresh Limes
1 Tablespoon Olive Oil
Salt & Pepper

Directions:

Mix together all the vegetables and cilantro in a bowl, then drizzle with the lime juice and oil.
Add the salt and pepper and toss well.
Store covered in the refrigerator for up to 5 days.
