Key Lime Fruit Dip

Sarah, Christy’s 8 year old daughter, loves to help out in the kitchen so over the holidays we had her pick out an easy recipe to make that everyone from the youngest to the oldest family member would enjoy. Sarah chose this easy to assemble lime flavored dip made with reduced fat cream cheese that was served with fruit skewers. This is a recipe that kids of many ages could make either on their own or with help from Mom, and who doesn’t love fresh fruit kabobs?

  • Fresh fruit is always a nutritionally sound choice for snacking and the variety of fruits used (strawberries, kiwi, pineapple, and grapes) include both antioxidant as well as a number of healthy vitamins.
  • Choosing light versions of both the cream cheese and yogurt help to keep the dip lower in fat and calories.

Yield: Serves 8

Prep Time: 20 mins

1.5 cups (12 oz) Reduced Fat Cream Cheese
3 to 5 Tablespoons Powdered Sugar
1 Teaspoon Grated Lime Rind
1 (6 oz) Carton Key Lime Light Yogurt
Fresh Squeezed Lime Juice
Seedless Grapes
Pineapple Chunks
Kiwi Wedges

Place the cream cheese, yogurt, lime zest and 3 tablespoons of powdered sugar in a blender and pulse until blended.
Add a few teaspoons of fresh lime juice and pulse until you have the right consistency.
Taste, and add a little additional sugar if needed, or a little extra fresh lime juice if the dip is still too thick.
Place the dip in a bowl and refrigerate until needed.
Use short (6 inch) wooden skewers and thread a piece of each type of fruit on each skewer as shown in the photos.
Arrange the dip on a platter with the skewers around it and serve.
