For the casserole:

  • 1 lb fresh green beans, trimmed and cut into 1-inch pieces
  • 3 Tbsp butter, divided
  • 1 yellow onion, diced
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1¼ tsp salt, divided
  • 2 Tbsp all-purpose flour
  • 1 cup chicken broth (or vegetable broth)
  • 1 cup whole milk (or half-and-half for richer sauce)

For the topping:

  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • Cooking oil spray

Instructions

  1. Steam the Green Beans
    Place green beans in a steamer basket over boiling water. Steam for 8 minutes, until just fork tender. Set aside.
    Preheat oven to 400°F.
  2. Make the Topping
    In a large saucepan, melt 1 tablespoon butter over medium heat.
    Sauté diced onion with ¼ teaspoon salt for about 4 minutes, until softened.Transfer onions to a bowl and toss with panko and Parmesan. Set aside.
  3. Make the Sauce
    In the same pan, melt remaining 2 tablespoons butter.
    Add mushrooms and remaining 1 teaspoon salt. Sauté 4 minutes.
    Stir in garlic and cook 1 minute more.Sprinkle flour over mushrooms and stir for 30 seconds.
    Slowly add broth and milk, stirring constantly.Bring to a simmer and cook 8–10 minutes, until thickened. (If the sauce runs together immediately after drawing a spoon through it, continue simmering.)
  4. Assemble
    Stir green beans into the sauce.
    Transfer mixture to a greased 8×8-inch baking dish.
  5. Top & Bake
    Sprinkle onion-panko mixture evenly over top.
    Lightly spray with cooking oil.Bake 25 minutes, until bubbly and golden.
