Easy Egg White Bites
These bites provide quick, easy and healthy protein power for a quick on the go breakfast or snack.
The beauty of this recipe is that you can adapt it according to what you have available or what you might be in the mood for. I happened to have spinach and orange bell peppers that needed to be used.
Here are a couple other ideas:
- Italian Egg White Bites: Finely chopped tomatoes, fresh chopped basil and mozzarella cheese sprinkled over top.
- Greek Egg White Bites: A few chopped, pitted Kalamata olives, dash of finely chopped red onion, finely chopped tomatoes and feta cheese sprinkled over top.
- Egg whites are low in calories, have a high amount of protein and contain potassium, selenium, magnesium and trace amounts of many other vitamins and minerals. By eliminating the yolk, the fat and cholesterol are removed.
- Any vegetables you add will add fiber, antioxidants and vitamins and minerals.
Egg White Bites
Yield: Makes 10 Bites
Prep Time: 10 mins
Nonstick Cooking Spray
10 Fresh Eggs, Separated
1 Medium Orange Bell Pepper, Cored and Finely Chopped
1 Handful of Baby Spinach Leaves, Finely Chopped
¼ Cup Or Less of Feta Cheese Crumbles
Freshly Cracked Black Pepper
Preheat the oven to 350 degrees F., and prepare the muffin tin by lightly spraying with cooking spray.
Add an egg white into each well of the tin, then add a teaspoon of finely chopped bell pepper and a teaspoon of chopped spinach to each egg white.
Sprinkle with oregano, feta and freshly cracked black pepper.
Place the tin in the oven and bake for 12 minutes or until a knife inserted in the center comes out clean and the bites are set. If your added ingredients were a little wet, this will increase baking time by a couple minutes.
Cool the bites slightly in the pan and run a knife around the edge of each muffin well to help lift the bites.
These can easily be reheated for a future grab and go breakfast or snack option.
