Watermelon, Tomato And Goat Cheese Salad
There is something about watermelon that just screams out summer, and I must admit we tend to eat a lot of this refreshing melon all through the warmer months. I first heard about this salad recipe a couple of years back and intrigued I knew I had to give it a try. The combination of the sweet melon, ripe tomatoes, onions, and goat cheese is quite honestly rather amazing and I think once you give it a try you’ll find yourself craving this salad often just as I do. This is a lovely, unique salad to serve when entertaining outdoors, or to take on picnics or outdoor get togethers. In order to ensure the salad stays fresh and crisp, just make sure you do not add the dressing until just before you serve it.

Watermelon, Tomato And Goat Cheese Salad
The combination of watermelon, tomatoes, onions, and goat cheese is both delicious and refreshing in this summer salad.

Ingredients:
About 4 Pounds Watermelon (Rind Included In Weight)
1 1/2 Pounds Ripe Seasonal Tomatoes
1 Medium Sweet Onion, Peeled, And Thinly Sliced
4 Ounces Soft, Creamy Goat Cheese
1/4 Cup Fresh Basil Leaves
4 to 5 Tablespoons Lemon Juice
1/2 Cup Extra Virgin Olive Oil
Salt & Pepper To Taste
Directions:
Cut the rind off the watermelon, and then cut the flesh into chunks about 1 1/2 inches big, discarding the seeds.
Chop the tomatoes into similar sized pieces.
Mix together the watermelon, onions, tomatoes, and basil leaves in a bowl.
In a small bowl, whisk together the lemon juice and olive oil and then season with salt and pepper.
Toss the dressing with the salad ingredients and then arrange onto 4 individual plates, or one platter.
Crumble the goat cheese over the salad, and then serve immediately.
