Watermelon Tomato And Feta Cheese Skewers

I was on a roll this summer creating a number of new recipes using watermelon, and loved the way the sweetness of the melon melds so well with savory ingredients. We entertain a lot in the summer and I am often trying out new ideas for healthy finger food that can be put together quickly yet is still full of flavor. Since I fell in love with watermelon salad, I knew that watermelon and tomatoes were are great combination so I decided to create skewers with chunks of watermelon and cherry tomatoes, and then added small chunks of feta cheese which created a similar flavor to the salad. These skewers are delicious and low in fat, and look pretty when served arranged on top of the watermelon rind as shown.

 
Why Healthy

  • Watermelon is packed with some of the most important antioxidants, is an excellent source of vitamin C and a very good source of vitamin A, notably through its concentration of beta-carotene. Watermelon is also a source of the potent carotenoid antioxidant, lycopene.
  • Tomatoes are rich in Lycopene, vitamin C, potassium, iron, and fiber.

Watermelon Tomato And Feta Cheese Skewers

Tomatoes, chunks of watermelon and feta cheese combine together perfectly in this easy summer appetizer.

Yield: Serves 4

Cook Time: 20 mins

Ingredients:

16 1 1/2 Inch Chunks Of Watermelon, Seeds Removed
16 Small Ripe Cherry Tomatoes
16 Small Fresh Basil Leaves
16 1 Inch Slices Of Low Fat Feta Cheese

Directions:

Assemble one piece of watermelon, feta cheese, and one cherry tomato with a basil leaf between on small skewers.
Cut a piece of the watermelon rind, turn it cut side down, and arrange the skewers over the top.
Serve immediately.
