Caprese Skewers With A Twist

These tomato, basil and mozzarella skewers are healthy, easy and do not require cooking. This is a standard menu item when I entertain, as they are always dazzling and always delicious.

In the past I have always made Caprese skewers by layering one full cherry tomato, basil leaf and mozzarella but this particular recipe takes it one step further by “sandwiching” in the mozzarella. The results are a hit!

The recipe calls for fresh mozzarella balls. These are often labeled boconccini or at Trader Joe’s, they are called Ciliegine. The fresh mozzarella adds a great creamy texture. One could use a package of fresh mozzarella cut into ½ cubes if the small mozzarella balls cannot be found. You may want to double the recipe as it makes a stunning platter and are often gobbled up quickly.

Caprese Skewers With A Twist

Yield: Serves 8

Prep Time: 15 mins

Ingredients:

1 Pint Grape Tomatoes, Halved
1 (8 Ounce) Container Fresh Small Mozzarella Cheese Balls, Sliced Into Thirds
4-inch Wood Skewers
Fresh Basil Leaves, Sliced Thinly
Olive Oil
Balsamic Vinegar

Directions:

Thread one half of the tomato onto the wooden skewer.
Next thread the slice of mozzarella and then repeat with the other half of the tomato.
Repeat to make the remaining skewers.
Place the prepared skewers on a serving platter.
Drizzle lightly with olive oil and balsamic vinegar.
Season with a crackling of salt and pepper.
Sprinkle basil leaves on top.
