Artichoke Salsa

Everyone needs one quick but impressive appetizer recipe – to toss together at the last minute when unexpected guests are arriving or for a last minute invitation to a gathering. Not only is this artichoke recipe super easy, it is very healthy and always a crowd pleaser.

The recipe is highly adaptable as well – one can use cherry tomatoes, grape tomatoes, flat-leaf parsley, sun-dried tomatoes and more.

Artichoke Salsa

This artichoke recipe super easy, it is very healthy and always a crowd pleaser.

Yield: Serves 6

Prep Time: 15 mins

Ingredients:

2 (14-Ounce) Cans Artichoke Hearts (NOT the marinated ones), Drained and Coarsely Chopped
5 Roma Tomatoes, Coarsely Chopped
1/2 Cup Pitted Kalamata Olives, Drained and Coarsely Chopped
3 Tablespoons Capers, Drained
1/2 Cup Red Onion, Finely Diced
2-3 Garlic Cloves, Finely Minced
Handful of Fresh Basil, Chopped
2 Tablespoons Extra-Virgin Olive Oil
Zest of 1 Lemon
Juice of 1 Lemon
Salt and Pepper, To Taste

Directions:

Combine all ingredients in a large bowl.
Toss to coat well.
Let sit for at least 10 minutes for flavors to come out and serve at room temperature or chilled.
Serve alongside multigrain tortilla chips, multigrain pita chips, radicchio leaves, or whole-wheat crostini.
Also makes a great topping for baked fish or grilled chicken.
